Thanksgiving is over and if you're human, you overindulged a bit...or a lot. This blueberry and goat cheese salad is a quick way to help you get back into a nourishing eating routine. The greens bring important but hard to find minerals, such as magnesium and zinc. From the walnuts, you get vitamin E, which acts as a scavenger of dangerous free radicals while bolstering skin and immune system health. By inviting blueberries to the party, you get a good dose of antioxidants that help protect LDL particles (bad cholesterol) from being oxidized into heart disease promoting agents. Finally, toss some pastured goat cheese into the bowl for bone-building nutrients, such as calcium and phosphorus.
